The Georgia Bar
Rosewood Hotel Georgia
A Crafted Ode to History
The Vision
I designed the cocktail program for The Georgia Bar as a "libation journey" through the heritage of Vancouver's most iconic hotel. The concept, titled A Crafted Ode, serves as a tribute to the luminaries and legends that have defined these storied halls since the 1920s.
The Design & Narrative
My work focused on balancing high-volume operational efficiency with a deeply rooted sense of place. Every signature cocktail was developed to tell a specific piece of the hotel's history:
Historical Icons: Created the Patricia (honouring HRH Edward, Prince of Wales) and Mr. Hospitality (a tribute to founding manager J.A. Weldon).
Architectural Tribute: Developed the R.T.G., utilising Macallan 12-Year to honour the original architect, Robert T. Garrow.
Local Legend: Designed The Herrick, a refined vodka and tea-based cocktail celebrating the hotel’s legendary long-time shoe shiner.
High-Standard Execution
Heritage Signatures: Reimagined the world-renowned Hotel Georgia cocktail (est. 1950s) to maintain its status as an internationally acclaimed signature.
Regional Craft: Integrated local British Columbia ingredients into the B.C. 75, spotlighting regional gin, honey, and sparkling wine.
Spirits Curation: Curated an extensive library of premium spirits, including rare Scotches, Agaves, and a dedicated Cognac digestif program.
